There are so many things to love about fall; cooler weather, changing leaves, football, the return of your favorite shows on TV. For me, when fall approaches I whip out my recipe book and start planning to make some good old fashioned comfort food. Fall is a time for soups, roasts, stews and baking.
I think the challenge for many of us is finding the time to make such a satisfying meal. Last fall I was given a recipe for taco soup that is hearty, delicious and best of all quick and easy to make. I feel compelled to share it as I know between hectic schedules of work, kids, school and other activities; we find ourselves with limited time to cook.
TACO SOUP (and really its so hearty that it should be Taco stew!)
1 pound ground beef, turkey or pork
1 can each:
chili beans (you can just use kidney beans if the chili beans are too spicy for you)
petite diced tomatoes
1 packet of ranch
1 packet of taco seasoning
Shredded cheddar cheese
Brown the meat in a pot and drain. Then add all canned goods (do not drain), stir well to incorporate all the seasonings and let it warm. To serve: fill the bottom of your bowl with fritos, pour in some soup and top with cheese.
This recipe literally takes 15 minutes to make! Enjoy!
